Ingredients
1 kilo (2 lbs) of ground beef - browned and seasoned with taco seasoning

fresh tomatoes (as many as you would like) 2 onions (chopped and sauteed) various other vegetables that you have on hand, like red peppers, zucchini, etc. 1 can of beans (drained) 1 can of corn (drained) 1 jar of tomato sauce `1/2 kilo (1 lb) of shredded cheese (Edam is pretty good)

Instructions
Brown the meat with taco seasoning. In a separate pan sautee onions, then add tomatoes and/or other vegetables and cook for a few minutes. Put the veggie mixture in a bowl and mix with the beans and corn.

Put a layer of tortillas, quartered, on the bottom of the crock pot, then put 1/3_-] of the meat, [-^1^'/'_3 of the veggie mixture, then cheese and repeat the layers. I put the tortillas as my top layer, then pour the jar of tomato sauce over the top of it all.

Cook it on high for 3 hours or on low for 6+. About half an hour or so before I serve it, I add another layer of cheese on the very top.
