- 3 oz/75g Margarine or Butter (1/3 cup)
1 level tablespoon of honey
6oz/150g Plain flour (1`1/4 cup)
`3/4 tsp Baking Powder
Pinch of Baking Soda
1 tsp ground ginger
3 oz/75g sugar (`1/4 cup and 2 T)
- Gently melt the butter or margarine in a pan together with the honey. Sift the flour, baking powder, baking soda and ginger and add to the melted mixture together with the sugar. Mix well together. Form the mixture into little balls using a rounded teaspoonful of the mixture. Place on ungreased baking trays, leaving space between them for them to spread (no need to flatten them)
Bake the fairlings in a moderately hot oven, (gas mark 5, 380°F, 190°C) for 12–15 minutes.
Leave to cool a couple of minutes before transferring to a wire cooling rack.
