This is a quick and easy favourite in our house. Also very delicious with plums instead of apricots!

ingredients
100 g margarine

100 g sugar (`1/2 cup) 2 small eggs 1 pinch of salt 1 grated peel of a lemon 200 g flour (1`1/2 cups) 2 t baking powder 750 g apricots or plums (1 lb and 10 oz) 30 g chopped almonds (`1/4 cup) sugar

instructions
Mix margarine and sugar well together. Add eggs, salt, grated lemon peel, flour and baking powder. Mix well.

Put in a round tin of 24cm diameter. Wash apricots. Cut in halves and slit each half several times lengthwise without cutting all the way through. Stick the apricot halves into the dough. Sprinkle with chopped almonds and sugar. Bake at 200 C for about 60 Minutes.
