Veggie Frittata
This looks and tastes fancy, but it is very easy to make.

`1/2 medium size yellow onion, chopped

1 clove garlic, minced or pressed 2 T olive oil or vegetable oil 1 cup any vegetables, cooked and chopped 4 eggs, lightly beaten `3/4 cup grated cheese `1/4 teaspoon marjoram 1 t dried basil `1/2 t salt `1/4 t pepper

Preheat the broiler. In a medium size iron skillet, saute the onion and garlic in the oil until tender (about 5 minutes). Add the vegetables and saute for one more minute.

Mix the eggs, cheese, herbs, salt and pepper in a small bowl. Pour the egg mixture over the vegetables in the skillet, reduce heat to low, and cook the mixture uncovered until the eggs are almost set (about 7 minutes). Place the skillet under the broiler until the frittata is lightly browned (2-3 minutes). Cut the frittata into 4 wedges and serve it.
