Makes 8 slices of toast for 8 kids or 4 teens.

Ingredients
4 eggs

One 8-ounce can crushed pineapple `1/4 cup milk 1 T maple syrup 1 T sour cream 1 T sugar 8 slices bread, crusts removed `1/4 cup butter (if not using non-stick griddle) Powdered sugar Shredded coconut

Instructions
In a blender, combine the eggs, pineapple, millk, and sugar until the mixture is smooth. Put the bread slices in a shallow dish. Pour the egg mixture over them, then turn to coat both sides with egg. Heat a non-stick griddle over medium heat (or melt the butter in a frying pan). Put 2 slice bread on the griddle and cook them until they are brown. Turn and cook the other sides. Repeat with the remaining bread slices. Dust the bread with powdered sugar and sprinkle with coconut before serving.
