Plum & Cinnamon Oat slices
Notes
You can vary the fruit in these, soaked dried apricots, blackberries, apples, whatever is in season. I like them best with plums though. They can be served as a snack or as dessert with ice cream or cream. And becasue of the oat & fruit content you can even pretend they're really healthy :o)

Ingredients
1 lb (450g) fresh plums

1 rounded t ground cinnamon 10 oz (275g) wholemeal or plain flour 5 oz (150g)porridge oats 1 t salt 8 oz (225g)butter 4 oz (110g) light brown sugar or white if unavailable

Instructions
Preheat the oven at 200°C/400°F, and prepare a non-stick baking tin 10x6 (25.5x15cm) lightly greased.

Cut the plums in half, twist to get stone out. Cut into thin slices. Place in a bowl & toss around with the cinnamon. Next mix the flour & porridge oats together with the salt in a large mixing bowl. Now melt the butter & sugar & stir occasionally till melted. Add it into the oat mixture until it forms a lump of dough. Now halve the dough & press one half into the baking tin with your hands, like a wall-to-wall carpet. Next scatter the plums over the surface, top with the remaining oat mixture, again pressing down firmly. Place in centre shelf of oven & bake for 25-30 minutes. Remove from the oven & allow to cool for 10 minutes before cutting it into squares. If serving as a dessert, you could bake it in a 9 inch round springform tin & then cut it into wedges to serve it (warm from the oven is best).
