This is a traditional Cape-Malay dish eaten all over South Africa. It makes a great alternative to the many tried & tested mince/ground beef recipes we all keep churning out!

460g/1 lb mince/ground beef

2 onions, chopped small 2-3 slices bread soaked in a little water 1 cup water 1 dessert spoon sugar 1 t apricot jam or mango chutney `1/4 cup of lemon juice or vinegar 2 bay leaves 1 chopped apple 1 T raisins/sultanas (optional) 1 dessert spoon ground coriander 1 t curry powder (2 if you like it stronger tasting) 1 t turmeric a little nutmeg salt to taste 2 eggs `1/2 cup milk 1 t cornflour

instructions
Cook onions in a little oil. Add all the spices & lemon juice/vinegar. Add ground beef, raisins (if using), soaked bread (broken up) & apple & bay leaves. Pour into oven proof dish.

Mix the eggs with the milk & cornflour & a little salt & pepper. Pour over the meat mixture & bake at 180°C for 35-40 minutes till browned on top.

You can adjust the jam/mango chutney/lemon juice acc to taste.

Serve with yellow rice (add 1 t of turmeric, 5 crushed cardamon seeds, a dessert spoon of raisins, half a cinnamon stick & `1/2 t sugar to the white rice as it cooks)
