4 chicken breasts

1 oz butter 1 clove garlic 1 onion chopped pinch cardamon 1 tsp curry powder `1/4 cup chicken or vegetable stock `1/4 cup runny honey `1/4 cup crunchy peanut butter 2 t grain mustard (e.g Dijon/French) salt to taste

Sweat the onion in the butter. Add garlic & continue to fry gently. Remove from heat onto a plate. Turn up heat & add the chopped chicken breast. Fry quickly till browned. Add garlic/onion & all other ingredients back into the pan. Simmer till cooked. Approximately 10 minutes. Beware cooking too long or the chicken breast will toughen.

Serve with basmati or white rice.
