CAKE:

50g/2 oz plain choc (70% cocoa chocolate is best) 160ml/6 fluid oz milk 150g/5oz plain flour 1 tsp baking powder `1/4 tsp bicarbonate of soda `1/4 tsp salt 75g/3oz unsalted butter 200g/7 oz sugar 2 large eggs `1/2 tsp vanilla essence

ICING: 50g/2 oz + 1 tbsp butter 75g/3oz plain choc 75g/3oz dark brown sugar (or substitute white or demerara here) pinch salt 55ml/2 fluid oz boiling water 125g/4oz icing sugar `3/4 tsp vanilla `1/2 tsp lemon juice

instructions
Melt the chocolate in HALF the milk. Cool. Cream butter and sugar. Add eggs to this mixture and then add in the cooled chocolate milk mixture. Add vanilla. Fold in flour, baking powder, bicarb of soda & salt. Add rest of milk as needed. (It will be quite liquidy). Divide mixture between two 8"" cake tins.

Bake at 180°C for 35-40 minutes.

FOR THE ICING: Put butter/choc/sugar/salt & water in a saucepan & melt gently. Then boil for 3 minutes stirring occasionally. Remove from heat, whisk in icing sugar, lemon & vanilla. Add the extra 1T butter at end to make it glossy & beat till smooth. Ice cake. Leave to set then dig in :-)
