Base

1 Packet Grancereal cookies – crumbed 3oz butter or marg

Filling ½ cup chilled hoopla cream A squirt of lemon juice 2 tubs Philadelphia cream cheese (or similar – 200 to 250g)(about 1 cup) 1 250 g tub mascarpone cream cheese (about 1 cup)

Instructions
In a pan melt the fat until just melted. Stir in the biscuit crumbs. Mix well. Press into the lined cake tin and chill in the fridge while you make the filling.

In a large mixing bowl whisk the chilled cream until thick and stiffening. Add the squirt of lemon juice and whisk well (adds binding not flavor). Add all the cheese a tub at a time – breaking it up with a fork as you take it from the tub. Whisk well between each added tub. Pour onto the crumb base and place it in the fridge.

For flavour: Add 1 tsp ginger to the base Use chocolate chips in the base Use chocolate biscuits Add more lemon for a lemon flavour or juice of a fresh lemon Add lemon and lime flavourings Decorate with fresh fruit or chocolate shavings!
