Roast Potatoes with Garlic and Bacon

Ingredients
8 tablespoons vegetable oil

600 g potatoes (11/3 pounds) Salt, pepper 4 sprigs rosemary 6 rashers (slices) smoked streaky bacon 4 crushed garlic cloves

Instructions
Preheat oven to 160°C.

Pour vegetable oil into a roasting tin, place in the oven. Peel potatoes, cut into quarters, place in a pan. Add enough cold water to cover, bring to the boil, then simmer for 2 mins. Tip potatoes into a colander and drain well. Add potatoes to the roasting tin, with rosemary, turn to coat in oil. Season well. Cook for 40 mins, until potatoes are brown and crispy on one side. Scatter 6 rashers bacon, cut into thick strips and garlic cloves into tin and mix well. Continue cooking for a further 15 mins until potatoes are golden.
