- Ceylon Curry
- A quick, easy and totally delicious curry dish !

- 500 - 600 grams lamb or beef in cubes (1 lb to 11/3 lbs)
2 onions chopped
1`1/2 tablespoons curry powder
`1/2 teaspoon ginger powder (or fresh ginger finely chopped)
1 tablespoon tomato puree
1 teaspoon salt
1 bay leave
2 peppers finely chopped
3 tomatoes skinned, in quarters
`1/2 dl white wine or chicken stock (3 T)
- Put meat in an ovenproof dish. Mix spices together, put over the meat, stir. Add vegetables. Add white wine or chicken stock. Put a lid on the dish and simmer in the oven for 1 hour at 250°Celsius in the middle of the oven. Take off lid and cook for another 10 minutes. Serve with rice.
Could also be made with other vegetables if your children do not like peppers.
