Cinnamon Pancakes

1`1/2 cup milk (or `3/4 C milk and `3/4 C water)

`1/4 cup oil 3 eggs 3 C flour 2 tbsp baking powder `1/4 cup sugar 1`1/2 t salt 1`1/2 t cinnamon

Combine dry ingredients in a large bowl. Stir gently to combine. In a smaller bowl, beat eggs well. Add milk and oil. Pour into the dry ingredients and stir until well combined.

Heat skillet over medium heat for 2-3 minutes. Lightly brush pan with oil or spray with cooking spray. Cook pancakes in small batches of 3-4 depending on the size of your pan. Pour 1/3 cup of batter onto pan for each pancake. Flip the pancake with a spatula when bubbles appear in the batter (about 2 minutes). Cook for 2 minutes more. Remove to plate and cover with a dish towel to keep warm. Repeat until all batter is cooked.

Serve with maple syrup, applesauce, jam, jellies or fresh fruit.
