Ingredients
1 lb. zucchini

2 large red potatoes 2 carrots 1 onion 3 eggs 1 t salt `1/4 cup flour `1/2 cup cornflake crumbs or bread crumbs `3/4 t baking powder `1/4 t pepper

Instructions
Warm `1/4 cup oil at 350°F (or microwave if glass pan) in 8"" pan. In one bowl, grate zucchini and sprinkle with `1/2 t salt. In another bowl, combine all dry ingredients. In a 3rd bowl, combine eggs, grated carrots, grated onion, and grated potatoes.

Squeeze out water from zucchini and add to the other vegetables. Stir in dry ingredients. Pour hot oil in mixture and mix well. Pour breadcrumbs on top of the mixture. Bake at 350°F until brown (about 45 minutes).
